Just as grapes define wine, casks shape whiskey, and hops make beer, juniper is the soul of gin. By law, juniper must be the primary botanical in every gin, setting the foundation for its distinct aroma and flavor.
While juniper berries take the spotlight, more than 100 botanicals can be used to craft gin. Yet, some are almost universally included: coriander, angelica root, lemon peel, orris root, cardamom, and pepper.
